Friends, if you’re looking for a simple, yummy, weeknight meal, I have the perfect recipe today.

I was actually in a hurry, running out the door to meet a friend for a walk, when I remembered I had a pork loin in the fridge that I’d meant to toss into the crock pot. Dang!

So I grabbed 2 simple ingredients—pork and pasta sauce–added them both to the pot, placed the lid on top, and turned my KitchenAid multi cooker to HI.

Making time for others

My friend and I sat in the warm sun, watching her doggies play, and heard each other’s stories.

I think about the olden days, when folks would just pop in to say hi, or sit out on the front porch or yard, and watch the kids play. I’ve never really lived in that world, but I’ve heard a lot about it.

Slowing down is intentional. Making time for my friends is essential. I love spending time with people, sometimes just to be with them.

 

And when a friend calls to go for a walk, or to stop by for coffee, I’m there!

It’s just important to me to have these little windows of unscheduled time, because this is what authentic friendships are about.

Coming home, I walked into the kitchen, filled with a delicious aroma, lifted the crock pot lid, and was pleased.

We always keep DeLallo pasta stocked, so after cooking the pasta, I scooped out a piece of pork, added the sauce, topped it off with fresh Parmesan cheese and fresh herbs (basil, or whatever herbs are in the fridge, or in the yard). I really believe simple recipes like this one today can always be good if you use premier foods (such as DeLallo).

Crock Pot Pork Ragu

Flavorful pork cooked in a ragu sauce, in the crock pot, for a crowd-pleasing, simple dinner!

Ingredients
 

  • 2 1/2 pound boneless pork loin, sliced (very little fat)
  • Kosher salt and freshly ground black pepper, to taste
  • 1 25 ounce jar favorite ragu or marinara sauce, I used DeLallo’s Tomato Basil
  • 1/4 cup red wine, optional
  • 1 16 ounce package Whole Wheat Pasta, I used DeLallo’s Capellini
  • Parmesan cheese
  • Fresh basil

Instructions
 

  • Season pork loin on both sides with salt and pepper. Prepare the crock pot with cooking spray.
  • Place pork loin (I like it sliced into 3/4-inch pieces, such as chops) into a slow cooker and top with red wine {optional} and marinara sauce. Cover and cook for 6-7 hours on LOW, or 4-5 hours on HIGH.
  • Prepare pasta according to package directions.
  • To serve, remove individual pork piece from crock pot and place on top of pasta. Spoon sauce on top. Garnish with fresh basil and Parmesan cheese.
